What is an NYC style cookie?

Thick, heavy, golden on the outside and gooey in the middle. Here's what makes a New York style cookie different from every other cookie, and how to spot a real one.

Short answer: an NYC style cookie is a big, thick, heavy cookie with a crisp golden outside and a soft, almost gooey middle. Think less "biscuit with your tea" and more "dessert you need both hands for".

Where the New York cookie comes from

The style became famous in New York in the 1990s, when small bakeries started selling huge, tall cookies that were more like a chunky scone than a flat biscuit. People queued around the block for them, and the "NYC cookie" was born. Today you'll find the style all over the world, including here in the Netherlands.

5 things that make a cookie an NYC cookie

  1. Size. A real NYC cookie weighs somewhere around 120–170 grams. A regular cookie is often 20–40 grams.
  2. Height. It's tall, not flat. Our cookies are about two fingers thick.
  3. Texture contrast. Crunchy, golden edges and a soft, fudgy centre. That contrast is the whole point.
  4. Big chunks. Not tiny chips, but proper pieces of chocolate, biscuits or caramel.
  5. Served fresh. They're best within a few days, which is why we bake to order.

How is it different from an American chocolate chip cookie?

A classic American cookie spreads out in the oven and ends up thin and chewy or crispy. An NYC cookie is shaped into a tall ball and baked from cold dough at a high temperature, so the outside sets fast and the inside stays thick and soft. Same ingredients, very different cookie. We go deeper on this in NYC cookies vs regular cookies.

What does an NYC cookie taste like?

Rich. Buttery, caramelised at the edge, and depending on the flavour, loaded with chocolate, Biscoff, M&M's or stroopwafel. Our best sellers are Chocolate Chip, M&M's, Biscoff and Red Velvet.

How to eat one (properly)

  • Warm it for 3–5 minutes in the oven at 160°C. Not the microwave if you can help it.
  • Break it in half. Admire the middle.
  • Optional: a scoop of vanilla ice cream on top.

Frequently asked questions

What is an NYC style cookie?

An NYC style cookie (or New York style cookie) is a big, thick cookie, usually 120–170 grams, with a crisp golden outside and a soft, slightly underbaked middle. It's closer to a scone in height than to a flat biscuit.

Why are New York cookies so thick?

The dough is cold when it goes in the oven, it's shaped into a tall ball instead of flattened, and it uses more flour and chunks than a regular cookie. The edges set before the centre can spread, so it stays tall.

Are NYC cookies supposed to be raw in the middle?

Not raw, but soft and fudgy. A good NYC cookie is fully baked but still gooey in the very centre, especially when warm.
