NYC cookies vs regular cookies: why are they so thick?
Same butter, sugar and chocolate, completely different cookie. Here's why New York style cookies are thick and gooey while regular cookies go flat.
You put a New York cookie next to a regular cookie and they look like they come from different planets. But the ingredient list is almost the same: butter, sugar, flour, eggs, chocolate. So what's going on?
1. Shape: a ball, not a disc
A regular cookie is scooped and often flattened. An NYC cookie goes in as a tall, rough ball. More height in means more height out.
2. Temperature: cold dough, hot oven
Cold dough spreads more slowly. A hot oven sets the outside fast. Together, that gives you a crisp shell around a soft, thick middle. A regular cookie dough at room temperature melts outwards before it sets.
3. Size: 4× the weight
A typical NYC cookie is several times heavier than a supermarket cookie. That mass is what keeps the centre soft: by the time the outside is golden, the inside is only just baked.
4. Big chunks
Big pieces of chocolate, biscuits and caramel act like a little scaffold inside the dough. They also give you pockets of melted goodness in every bite.
Side by side
| NYC cookie | Regular cookie | |
|---|---|---|
| Weight | heavy, dessert-sized | light, snack-sized |
| Height | tall, 2 fingers | flat |
| Edge | crisp and golden | even all over |
| Middle | soft, gooey | same as the edge |
| Best | fresh, or warmed up | out of the packet |
Which is better?
We're a bit biased. 😉 But if you've only had flat cookies, try a real New York one at least once. Start with Chocolate Chip: it's the benchmark.

Frequently asked questions
What's the difference between an NYC cookie and a regular cookie?
An NYC cookie is bigger, taller and heavier, with a crisp outside and a soft, gooey centre. A regular cookie spreads out into a thinner, more even biscuit.
Why don't NYC cookies spread in the oven?
The dough is cold, shaped into a tall ball, and baked hot. The edges set before the middle has time to spread.
